Made these scallop tacos (http://www.netplaces.com/quick-easy-recipes/seafood/scallop-tacos.htm) this weekend with some scallops from Rimrackfish.com and cabbage from middlebranchfarm.com CSA! Too bad Roger doesn't have any mango trees... SO GOOD!
1 c whole wheat flour 1 c unbleached flour 2 1/2 T ground cinnamon 1/2 tsp nutmeg 1/2 tsp cloves 2 tsp baking soda 6 egg whites 3/4 c + 2 T raw blue agave syrup 1 c unsweetened applesauce 1/4 c buttermilk 1 1/2 tsp vanilla extract 8 oz. crushed pineapple in juice 2 c shredded/finely chopped carrots (I pulse in food processor until small) 2/3 c walnuts, chopped (optional) 1/2 c raisins
Preheat over to 350. Grease two round cake pans and add parchment paper. Stir flours, cinnamon, nutmeg, cloves, baking soda in medium bowl. In large bowl, beat egg whites until soft peaks form. Slowly beat in agave. Then slowly beat in applesauce, buttermilk and vanilla. Stir wet ingredients into flour mixture with spoon until just mixed (do NOT overmix!) Stir in one ingredient at a time - pineapple, carrots, walnuts and raisins. Spread batter into pans, bake 30-40 min.

- Oven to 350. Grease pan/tin or line with cups.
- Whisk together dry ingredients in large bowl.
- Whisk together applesauce, oil, buttermilk, agave and egg whites in another bowl.
- Pour wet into dry and stir until just mixed. Add raisins.
Mention of mangoes above made me think of this recipe. My husband actually devoured the salad without realizing it was kale (he's not usually a fan...). I had fun "massaging" the kale!
Kale and Mango Salad
Bunch of kale 1-2 mangoes Croutons Toasted Seeds (optional)
Dressing: 1/2 lemon 1-2 t honey olive/grapeseed oil vinegar salt and pepper
Make dressing to your personal taste. Add to kale and massage kale until the fibers break down and it becomes much softer. Add mango, seeds and anything else you like!
